Ingredients

  • 1 Multigrain bagel, halved (115g)
  • ½ ripe avocado, sliced (50g)
  • 1 free range egg (42g)
  • 2 tsp butter (10g)
  • Pinch of salt and pepper

Serves 1

Method

  • Toast the halved bagel and poach the egg in boiling water for 2 minutes.
  • Once toasted, butter both halves of the bagel and layer the bottom of the bagel with the sliced avocado.
  • Place the poached egg on top of the avocado.
  • Finish with a sprinkle of salt and pepper and the other half of the bagel.
